Getting healthy meals on the table can be tough, especially for my clients – and perhaps you too – who often find it challenging to make nutritious choices every night. That’s why I was thrilled to find a simple yet effective healthy cooking technique that drastically lowers the fat and carb count in your favourite dishes!
The method I’m talking about is cooking en papillote, or in parchment paper packets. This technique involves wrapping meat, veggies, and seasonings in parchment paper and baking them in the oven. The steam inside the packets helps create incredibly moist and tender meals.
Here’s why cooking en papillote is amazing:
1. It’s Incredibly Healthy!
The best part about cooking en papillote is that you don’t need to add oils or fats to the dish. The steam from the ingredients does all the work, keeping the dish moist without extra calories. This helps reduce fat, which can accelerate fat loss and help you lean out faster. You can also make a complete meal with protein and veggies while skipping high-calorie sauces or grains, making it a perfect option for a light, healthy dinner.
2. It’s Quick and Easy!
One of the easiest cooking methods out there, en papillote is simple enough for anyone, even a child, to prepare. All you need to do is wrap your chosen ingredients in parchment paper and pop them in the oven. It’s that simple and takes no time at all!
3. The Combinations Are Endless!
The possibilities are endless when it comes to creating meals with this technique. You can mix and match your favourite proteins, vegetables, and flavours to suit your taste buds. Get creative with different combinations and try new flavours – the options are limitless!
4. Clean-Up Is a Breeze!
We all have those days when we don’t want to deal with dishes. With cooking en papillote, the clean-up is effortless. Since the food is wrapped in parchment paper, there are no dirty pans to clean. After you finish your meal, just discard the paper and you’re done!
By now, I hope you can see why I’m so excited about cooking en papillote, and I bet you’re eager to try it yourself. I’ve got a recipe for you to try – Dijon Chicken with Sweet Potato and Green Beans – and below I’ll guide you through the simple 5-step process to design your own en papillote meals.
Step 1: Choose Your Protein
Chicken is a fantastic option for this method, as the steam helps keep it juicy. For quicker cooking, pound the chicken thin or use a thin fillet. Cook time is around 30 minutes.
Shrimp is another great choice for en papillote. It absorbs all the delicious flavours and turns plump and juicy, with a cook time of just 15 minutes.
Fish fillets, like salmon or white fish, are also a great option. Fish typically cooks in 20-25 minutes, depending on the thickness of the cut.
If you prefer a vegetarian meal, tofu or canned beans work great, with a cook time of 15 minutes.
Step 2: Choose Your Veggies
There are no limits when it comes to choosing veggies. Sweet potato, zucchini, green beans, mushrooms, and more are perfect for this technique. Just make sure to chop the veggies small enough so they cook in the same time as the protein.
Feel free to get creative by spiralizing your veggies or even shredding them like rice!
Step 3: Add Flavours
This is the fun part – adding your favourite sauces and spices. Use BBQ sauce, teriyaki, Dijon, or anything you love, and pair it with fresh herbs for an added kick.
Make sure to add moisture to the packet if needed, especially if your veggies are dry. You can add a little chicken broth, wine, or olive oil to ensure the steam builds up.
Step 4: Wrap It Up
Cut four 12-by-16-inch pieces of parchment paper. Fold each one in half, then open it up and arrange a quarter of your veggie mix in the centre of each piece. Season with salt and pepper, then top with your protein and the chosen flavours.
Fold the parchment paper over the ingredients and crimp the edges to seal it tightly, making sure there are no openings where steam can escape.
Step 5: Bake It
Preheat your oven to 400°F and bake based on the protein you’ve chosen. Since the food is sealed inside the paper, you can’t check the doneness until after it’s done, so it’s better to cook it a little longer than undercook it. Serve the packets on plates and tear them open just before eating.
