Smoky BBQ Tofu Burrito Bowl – Fun, Fast, and Flavorful

If “healthy eating” makes you picture sad lettuce and regret… relax. This bowl is here to fix your reputation with your taste buds. It’s a classic burrito bowl, but with a glow-up: quinoa steps in for rice (tiny super-grains doing the most), black beans bring the comfort, veggies add crunch, and BBQ tofu shows up dressed like it’s heading to a backyard cookout.

What You Need (Serves 4)

  • 1 (14 oz) extra firm tofu, pressed and sliced
  • ¼ cup BBQ sauce
  • 2 cups red quinoa, cooked
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 small red bell pepper, seeded and diced
  • ½ cup canned corn
  • ¼ cup goat cheese, crumbled
  • 2 Tbsp fresh cilantro, chopped
  • 1 tsp olive oil
  • 1 tsp fresh lime juice
  • Sea salt + black pepper, to taste

How to Make It (No Culinary PhD Required)

1) Turn on the oven and pretend you’re on a cooking show.

Preheat to 350°F. Lightly grease a casserole pan with olive oil so your tofu doesn’t stage a protest.

2) Give tofu its “crispy confidence” era.

Lay tofu slices in a single layer and bake 30 minutes, flipping halfway. You’re aiming for “golden and firm,” not “sad and soggy.”

3) BBQ makeover time.

Brush/coat tofu with BBQ sauce on both sides. Bake 15 more minutes until it’s sticky, glossy, and smells like a summer party.
