Who knew that a warm bowl of soup could be the secret to your best…

Mediterranean Turkey Roulade Recipe | Healthy & Easy
Let’s talk about the word Mediterranean Turkey Roulade. It sounds like something you’d order at a restaurant where the menu has no prices and the waiter judges you silently. But relax—this dish is way more fun than fancy.
A roulade simply means you roll something up with delicious fillings inside. In this case, we’re taking juicy turkey breast, stuffing it with a Mediterranean-inspired mix of spinach and garbanzo beans, and rolling it into a show-stopping meal that looks impressive without being intimidating.
It’s healthy, packed with flavour, and guaranteed to make people think you’ve “really been getting into cooking lately.”
Serve this Mediterranean Turkey Roulade with roasted vegetables and a crisp salad, and suddenly it’s a full-on dinner moment. Let’s get rolling (literally).

What You’ll Need
Serves 6 (or fewer if people go back for seconds… they will)
The Sauce (Where the Magic Starts)
- 3 roma tomatoes, chopped
- ¾ cup pimento-stuffed green olives, chopped
- 1 fennel bulb, halved and sliced
- 2 tablespoons fresh garlic, minced
- 1 tablespoon capers
- 1 tablespoon lemon zest
- 1 tablespoon fresh oregano, minced
- Black pepper, to taste
The Stuffing (Main Character Energy)
- 2 cups frozen spinach, chopped
- 2 teaspoons lemon zest
- ½ teaspoon red pepper flakes
- Sea salt and black pepper
- 1 can (15 oz) garbanzo beans, drained, rinsed, and roughly chopped
- 1 egg, beaten
- 1 tablespoon fresh oregano, minced
The Star of the Show
- 5 pounds boneless turkey breast, butterflied and flattened
The Basting Vibe
- ¼ cup lemon juice
- 2 tablespoons olive oil
- 1 teaspoon lemon zest
- 1 teaspoon dried rosemary, crushed
How to Make It (You’ve Got This)
- Set the stage
Preheat your oven to 425°F. Lightly grease a 9”×13” casserole dish with olive oil so cleanup stays friendly. - Build the sauce
Mix all the sauce ingredients in a bowl, then spread them evenly across the bottom of the casserole dish. This will flavour the turkey from below like a delicious safety net. - Create the stuffing
Sauté the spinach with lemon zest and red pepper flakes for about 3 minutes. Squeeze out excess liquid (spinach is sneaky like that), then mix it with the remaining stuffing ingredients until well combined. - Roll it up
Lay the turkey flat and season with salt and pepper. Spread the stuffing evenly over the surface, then roll it up tightly—think burrito, not chaos. Tie it with kitchen twine every 4 inches to keep everything secure. Place it seam-side down on top of the sauce. - Whisk the baste
Combine all basting ingredients in a small bowl and whisk until blended. This is what keeps the turkey juicy and irresistible. - Roast and pamper
Roast for 45 minutes, basting every 10 minutes like a responsible turkey parent. It’s done when the internal temperature reaches 165°F. - Rest, slice, impress
Let the roulade rest for 10 minutes (this keeps it juicy). Slice, spoon over some of that glorious sauce, and serve. Take a bow.
