About That “Sweet Potato Rice” Thing…

Yes, sweet potato rice is exactly what it sounds like: sweet potato that’s been transformed into tiny rice-like pieces. It’s basically a sweet potato that went to finishing school.

To make it, you spiralise the sweet potato into noodles, then pulse it in a food processor until it looks like rice.
BUT if you’re not in the mood for kitchen gymnastics, just finely chop the sweet potato and call it a day. Your skillet won’t judge you.

What You Need (Serves 4)

  • 1 lb lean ground beef
  • 1 tsp sea salt
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 2 cups sweet potato rice (or finely chopped raw sweet potato)
  • 2 cups kale, chopped
  • 1 cup liquid egg whites

Optional toppings (aka “make it fancy”):

  • ¼ cup fresh mozzarella
  • ¼ cup fresh cilantro
  • ¼ cup guacamole

How to Make It (a.k.a. Skillet Magic)

1) Brown the Beef

Put a large skillet on medium-high heat. Add the ground beef and cook it while breaking it up with a spoon like you’re winning an argument.
Cook until all the pink is gone. Then take it off the heat—your beef needs a breather.

2) Season Like You Mean It

Sprinkle in the salt, paprika, and garlic powder. Stir it through so every bite gets invited to the flavour party.
Put the skillet back on medium heat, add your sweet potato rice (or chopped sweet potato), cover it, and cook for 5 minutes.

3) Add the Greens (Yes, Kale. Relax.)

Toss in the chopped kale, cover again, and cook for another 5 minutes.
The kale will soften and stop acting so dramatic.

4) Scramble the Egg Whites

In another skillet, scramble the egg whites over medium heat until they’re just barely set—soft, fluffy, and not dry like a sad gym snack.

5) Combine Everything

Mix the scrambled egg whites into the beef and veggie skillet.
Top with mozzarella and cilantro if you’re feeling extra. Serve immediately with guacamole because guacamole makes everything better, including your mood.
