What You Need (Serves 20, because we believe in big bowls of soup, obviously)
- 1 ½ pounds mild Italian sausage (loose, not in links – let’s get messy!)
- 1 large yellow onion, halved and thinly sliced (try not to cry too much!)
- 2 teaspoons garlic, chopped (garlic breath, here we come!)
- 4 medium carrots, peeled and sliced into ¼” rounds (get those vitamins!)
- 1 head green cabbage, core removed and shredded (cabbage = super healthy!)
- 3 large tomatoes, diced (fresh and juicy, baby)
- 2 teaspoons sea salt (plus extra if you like to live on the salty side)
- Fresh ground black pepper (about 5 cracks – or more if you’re feeling bold)
- 1 teaspoon ground sweet paprika (the spice that makes it nice)
Instructions
- Brown that Sausage!
In a big soup pot, toss that sausage in and let it sizzle over medium-high heat. Break it up into small pieces as it cooks, so it gets all crispy and flavorful. Once it’s brown and smelling amazing, scoop it out and set it aside in a bowl (but leave all the glorious sausage oil behind in the pot!). - Veggie Time!
Now, add the onions, garlic, and carrots to that sausage goodness in the pot. Let them cook for about 5 minutes, stirring often, until they’re tender and you start to smell the veggie magic happening. Throw in the cabbage and tomatoes, and stir again for another 5 minutes. It’s gonna look colorful and delicious! - The Soup Magic
Mix in the rest of your ingredients, then bring the soup to a low simmer. Let it bubble away for 20 minutes, giving you plenty of time to bask in the aroma of your creation. - Taste Check!
Now for the most important part – the taste test! Add a little more salt and pepper if needed, and then… serve it hot and fresh! Get ready for a comforting, soul-warming experience.
