Smoky BBQ Tofu Burrito Bowl – Fun, Fast, and Flavorful
If “healthy eating” makes you picture sad lettuce and regret… relax. This bowl is here to fix your reputation with your taste buds. It’s a classic burrito bowl, but with a glow-up: quinoa steps in for rice (tiny super-grains doing the most), black beans bring the comfort, veggies add crunch, and BBQ tofu shows up dressed like it’s heading to a backyard cookout.
And if tofu still feels suspicious to you, that’s okay. Swap in chicken or steak and pretend you never doubted this plan. Either way, you’ll end up with a bowl that’s filling, flavorful, and weirdly satisfying—like you meal-prepped, but make it fun.
What You Need (Serves 4)
- 1 (14 oz) extra firm tofu, pressed and sliced
- ¼ cup BBQ sauce
- 2 cups red quinoa, cooked
- 1 (15 oz) can black beans, drained and rinsed
- 1 small red bell pepper, seeded and diced
- ½ cup canned corn
- ¼ cup goat cheese, crumbled
- 2 Tbsp fresh cilantro, chopped
- 1 tsp olive oil
- 1 tsp fresh lime juice
- Sea salt + black pepper, to taste
How to Make It (No Culinary PhD Required)
1) Turn on the oven and pretend you’re on a cooking show.
Preheat to 350°F. Lightly grease a casserole pan with olive oil so your tofu doesn’t stage a protest.
2) Give tofu its “crispy confidence” era.
Lay tofu slices in a single layer and bake 30 minutes, flipping halfway. You’re aiming for “golden and firm,” not “sad and soggy.”
