Zany Zucchini Noodles with Beefy Rag

Who said you can’t enjoy spaghetti night while living the fit and lean life? With this recipe, you can have your noodles and eat them too! We’re talking noodles made from fresh, green zucchinis and a sauce that’s not just easy but also packed with protein. And hey, if you’re feeling adventurous, go ahead and sub in ground beef for minced beef!

What you’ll need: Serves 6

  • 2 lbs of minced, grass-fed beef
  • 2 tablespoons of tomato paste
  • An 8 oz can of tomato sauce
  • 1 tablespoon of chili sauce (because why not add a little kick?)
  • 1 cup of cherry tomatoes, halved
  • ½ teaspoon of sea salt
  • 4 zucchinis
  • ¼ cup of fresh parsley (for that extra zing!)

Instructions:

  1. In a large skillet, let’s get that beef nice and brown over medium-high heat. Once it’s looking all brown and lovely, give it a drain and then turn down the heat to medium.
  2. Now, toss in the tomato paste, tomato sauce, chili, cherry tomatoes, and sea salt. Mix it all up until it’s nice and cozy. Let it sauté until those cherry tomatoes are soft and squishy, which should take about 5 minutes.
  3. While that’s cooking up a storm, let’s deal with those zucchinis. Peel off those green skins, then run them through a spiral slicer to create long, thin spaghetti noodles.
  4. Plate up! Grab a handful of those zucchini noodles, top them with that delicious beef sauce, and sprinkle on some fresh parsley to finish it off.
